A polished cast iron skillet is the pan a family cooks Sunday in for fifty years, and then someone inherits it. The underside takes a bright mark in the iron: the family name, a wedding date, the year the house was bought. Ten inch for two people, twelve for a family. I buy from the small foundries that still polish by hand.
